Kale and Pear Salad with Goat Cheese and Walnut

After all the Christmas feast with ham, fish, cheeses and delicious desserts, who isn’t craving some greens…

This amazing Kale and Pear Salad topped with Goat Cheese and Walnut with an exceptional vinaigrette is definitely something to try if you are not a fan of boring salads. Perfect on its own as a light lunch or dinner or served as a side. I served it with fried eggs and a slice of Beetroot, Caraway and Goat Cheese Bread. Gorgeous!

Kale and Pear Salad with Goat Cheese and Walnut

Ingredients (serves 2):

  • 100 g kale
  • 1 pear
  • 30 g walnut
  • 100 g goat cheese
  • 1 tsp honey

For the vinaigrette:

  • 1 tsp honey
  • 2 tsp olive oil
  • 2 tsp balsamic vinegar

Instructions:

  • In a small bowl, prepare the vinaigrette by mixing all the ingredients together and set it aside.
  • Chop the kale and place it into a large salad bowl. Pour the vinaigrette and massage it gently with your hands until the kale is a bit softened coated and well covered.
  • Cut the pear into small cubes and add it to the kale. Combine well.
  • Crumble the goat cheese on top and add the chopped walnut. Before combining, drizzle a tablespoon of honey on top.
  • Serve it on its own or add some protein and/or carbs of your choice for a delicious, nutritious and balanced meal.
