Avocado Toast with Gorgonzola

Avocado toast is always an excellent choice for breakfast and I love to make them a bit extra if I have the time.

My basic avocado toast recipe is super simple: toasted sourdough or rye bread, topped with mashed avocado and a little bit of truffle, sea salt and pepper. Done! As I had gorgonzola in my fridge, I decided to use it as a topping this time, instead of the usual fried egg. Sprinkled it with a little bit of za’atar as a finishing touch. Absolutely gorgeous!

Ingredients:

  • Bread of your choice (sourdough recommended)
  • 1/2 avocado
  • Gorgonzola
  • Salt and pepper
  • Truffle oil or olive oil
  • Za’atar (optional)
